Sataras is a simple Balkan Vegetable Stew made with peppers, tomatoes, and scrambled eggs. It's very similar to Shakshuka. Serve for breakfast or lunch.

Sataras (read Satarasch) is a beautiful vegetarian vegetable stew that is very popular in the Balkan region but unknown anywhere else in the world. It’s very similar to the famous Shakshuka. In Shakshuka, we would find sunny-side-up eggs, whereas here in Sataras, the eggs are scrambled. Sataras is served for breakfast, light lunch, or even dinner. It’s prepared in less than half an hour, and we can preserve it for up to a year (in that case, don’t add the eggs). We personally don’t eat it with a spoon; we simply dig in with Lepinja (Balkan flatbread) or other flatbreads. It’s so creamy, flavorful, and satisfying.

How to make Sataras at home

Making Sataras at home is quick and super simple. Below you will find the whole recipe with instructions, and here's a brief overview of the recipe for easier preparation:

  1. In a skillet, cook the onion and peppers.
  2. Add the chopped and grated tomatoes, garlic, and spices. Cook for a couple of minutes.
  3. Add the eggs and cook until scrambled and cooked.
  4. Serve immediately with fresh bread or flatbread.

What to serve with Sataras (Balkan Vegetable Stew)

Feel free to prepare the Sataras with or without eggs. We usually add eggs to make this meal more filling and nutritious. Scramble the eggs in a bowl, then add them to the vegetables in the skillet. We love serving this delicious Balkan Vegetable Stew with:

Storing and Preserving for winter

Store Sataras in three ways. You can either it in a fridge, freezer or preserve it in jars for winter. But make sure not to add eggs when storing.

Keep any leftovers in an airtight container. Store in the fridge for up to 3 days. Reheat well.

Transfer the cooked and cooled Sataras to a freezer bag or airtight container. Seal, then place in the freezer. Keep in the freezer for up to 6 months. Defrost, reheat, and serve.

We can easily preserve the Sataras in jars too. In that case, make ten times this recipe. The cooking time will also increase by 15 - 20 minutes. Preheat the oven to 100°C / 210°F. Place your jars and lids on a baking sheet and place them in the oven for 15 minutes to sterilize. Pour the vegetable stew into the jars. Set the lids on the jars and close tightly. Wrap the jars into a kitchen towel and let them cool slowly for about 12 hours. Then store in a cold, dark place for up to a year.

METHOD

  • cook the vegetables

    Place a skillet over medium-high heat. Add the olive oil, diced onion, and diced peppers. Cook for 5 - 8 minutes, stirring occasionally.

  • cook the sataras

    Grate one tomato and finely chop the other one. Add to the peppers in the skillet along with diced garlic and dried oregano. Stir and cook for about 5 minutes. Pour in the water, continue to cook for 5 minutes or until the vegetable cook. Most of the water will evaporate, and the stew will become creamy and delicious—season to taste with salt and pepper.

    Tip
    Optionally, peel the tomatoes. Using a sharp knife, cut a cross on top of each tomato. Dip into hot water for 20 - 30 seconds, then quickly cool under cold running water. Peel the tomatoes.
  • add the eggs

    In a bowl, whisk the eggs with a fork. Reduce the heat to the minimum. Add the scrambled eggs. Shake the pan, and leave for about 30 seconds, then, while stirring, cook the eggs on low heat for about 1 - 2 minutes, or until scrambled and cooked.

  • serve

    Remove the Sataras from the heat. Sprinkle with chopped parsley and serve immediately with your favorite flatbread.
