Oh, I just love this cheesecake recipe with sour cream. It's made of three layers and it's baked three times, but don't worry, it's a simple and quick process. So why do we like it so much?

HOW TO MAKE SOUR CREAM CHEESECAKE AT HOME

Making this cake at home is so so so easy. I would even say that this is one of the easiest cakes to make at home in general. There's no water bath needed, you don't need to slice the cake in the process. It's so easy. This year we've partnered with an amazing Slovenian company called Mlekarna Celeia. Their dairy products are local and most importantly, they are delicious, high-quality and consistently amazing. That's especially important if you want to recreate the same flavor and texture every time you make a recipe. This recipe is made with their dairy products as well.

Let's see how the process looks:

  1. Make the graham cracker cheesecake crust
  2. Bake
  3. Mix the cream cheese and ricotta cheese into a smooth cream, pour over the crust
  4. Bake
  5. Make sour cream topping for cheesecake, pour over the cream cheese cream
  6. Bake
  7. Cool
  8. Place in the fridge to set
  9. Slice and devour

How do you know that cheesecake is baked?

Your cheesecake is baked when the edges are solid and are beginning to turn golden brown. The center should still be a bit jiggly and soft. Don't over-bake your cheesecake, or it won't be as tasty, creamy and smooth.

How long does it take for the sour cream cheesecake to set?

First, you need to bring the baked sour cream cheesecake to room temperature. Then, place in the fridge for at least 4 - 6 hours, or even better, overnight. Your cheesecake will set and become extra creamy, rich, and delicious.

How to store Sour Cream Cheesecake

Store any leftover cheesecake slices in an airtight container. Keep chilled in a fridge for up to 3 days.

METHOD

  • First layer: graham cracker cheesecake crust

    In a bowl, mix graham cracker crumbs, melted butter, and sugar. Transfer the mixture to a non-stick removable loose bottom cake pan 20 cm or 8-inches. Press it firmly in the bottom of the pan. Place in the preheated oven. Bake for 10 minutes at 180 °C / 350°F. Remove from the oven and set aside to cool.

  • Second layer: Cream cheese

    In a food processor mix together cream cheese, ricotta cheese, eggs, sugar, and vanilla sugar. Mix until the mixture becomes creamy and smooth. Pour the cream cheese mixture over the baked and cooled graham cracker cheesecake crust. Place the cheesecake with the two layers back in the oven. Place the pan on the middle rack and bake for 45 - 55 minutes at 150 °C / 300 °F or until the edges are solid and the center is still a bit jiggly and soft.

    Tip
    If you don't have a food processor, you can use a blender or hand-held electric mixer as well.
  • Third layer: Sour cream

    Make the sour cream topping for cheesecake. In a bowl beat together sour cream, sugar and vanilla sugar. Beat until the mixture becomes creamy.

  • Bake and Serve

    Take the baked cheesecake from the oven and let it cool for about 10 minutes. Then spread the sour cream topping evenly over the baked cake. Place back in the oven and bake for another 10 minutes at 150 °C / 300 °F. Remove the baked Cheesecake with sour cream topping from the oven. Bring the cheesecake to room temperature, then place in the fridge. Leave the cheesecake to set in the fridge for at least 4 - 6 hours, or even better, overnight. Place the cake onto a serving plate, slice and serve.
